I cover my jars tightly and swish and burp them a few times a day to release gas. If it has lots of curds you might have too much kefir to too little milk. I like mine that way. Just divide it into 2 or more jars and see what happens. The temp in your house will make it go faster too if your house is warm. A few weeks later I have 3 cups of grains that some were almost the size of golf balls so you are wrong. Grains require the lactose in milk to grow not the fat. You might have thinner kefir from using 1% but it feeds the grains more of what they need to grow. I say to leave your grains in your milk longer like 2 or 3 days before you strain them if the temp is below 70 F. I did this a few times before they really got used to my milk. I also swirl them in my covered jars and burp them a few times a day because I tightly seal my jars. I keep way too many grains in my jars and I get curds which doesn't bother me one bit. I just swish the jar and mash them through my strainer with a spatula and it doesn't hurt my grains. It's weird that ppl here have so much trouble growing them. I was worried I wouldn't be able to make kefir but it's so easy. I do try to stay away from metal strainers though. Kefir I have found is the simplest and easiest cultured product to keep and make safely at home. The probiotics in the grains prevent the growth of other unwanted bacteria.
